Especially in summer it is very popular with its refreshing taste. On top of that, it is not as high in calories as a cream cake. Perfect for anyone who likes to enjoy a piece of the dead but doesn't want to be afraid of the scales again.

Now you are certainly asking yourself the question of how that fits together, after all it is generally known that kiwifruit in connection with dairy products produces bitter substances. However, there is a very simple trick on how to prevent this problem. Before you put the kiwi pieces on the cake, you have to blanch them so that the enzyme "actinidine" is destroyed. Then nothing stands in the way of the delicious cake feasting.

Ingredients:

➤ for the dough you need:

  • 250 g ladyfingers
  • 150 g butter

➤ for the covering you need:

  • 500 g curd
  • 150 g of sugar
  • 375 ml cream
  • 2 cl orange liqueur
  • 1 point of vanilla sugar
  • 1 pt.gelatin
  • about 5 kiwi fruits

Preparation:

Place 1 spoon biscuits in a freezer bag and finely crumble with a rolling pin. In addition, melt the butter in the saucepan. Then mix both together and press on the bottom of a greased springform pan. Then chill.

2 Mix the curd with the sugar and orange liqueur. Then whip the cream until stiff, pour in the vanilla sugar and then fold the cream into the quark mixture.

3Then dissolve the gelatin, pull it under the curd cream mixture and spread it on the floor. Then refrigerate until a solid mass has formed.

4Shell the kiwis shortly before serving, cut them into slices, pour boiling water over them, let them drain and then place them on the cake as you wish.

A little hint:

Decorate the cake a little more. For example, add strawberries as a splash of color in the middle. Or decorate the edge of the cake with chopped candied kiwi. Chocolate chips are of course also possible. There are no limits to your imagination.
